If you’re looking for the perfect pancakes to make with your littles ones then look no further. These pancakes only require five ingredients and are super nutritious for a growing toddler.
1 medium egg
- 250 ml of milk (one cup)
- 130 grams of whole wheat flour
- 1 teaspoon of baking powder
- 2 tablespoons of melted unsalted butter
- Greek yogurt (To serve on top)
- Fresh fruit (Blueberries, strawberries etc.)
The method is super simple, in a medium sized bowl, beat your egg and add the milk then mix! You will then need to mix in the flour and the baking powder followed by the butter. Once you have mixed all your ingredients together you will need to heat the pan to medium heat and lightly grease the pan. To make small pancakes (between one and two inches) use a teaspoon or tablespoon to drop the pancake mixture in the pan. Cook the mixture until the top of the pancakes have bubbles on them and the mixture is no longer shiny. Flip and cook the opposite side for an additional minute until the bottoms are golden brown. Once cooked, remove them from the heat and set on a plate to cool. Now serve with a blob of yogurt and fresh fruit!
See, easy peasy right?
Now for some amazing American pancake that we found on BBC Good Food! This is a super easy recipe that has such a light and fluffy texture to create the perfect pancake.
You will need:
- 135g/4¾oz plain flour
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp caster sugar
- 130ml/4½fl oz milk
- 1 large egg, lightly beaten
- 2 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking
Start by adding all the dry ingredients such as the baking powder, salt and caster sugar into a bow. Then in a separate bowl lightly whisk the milk and egg together followed by the melted butter. Then pour the milk mixture into the flour mixture. Using a fork, beat the ingredients together until you have a smooth batter. After mixing, let the batter stand for a few minutes.
You will then need to heat a frying pan over a medium heat and add a dollop of butter. When the butter is melted add a ladle of batter, it may seem thick but this is how it should be. The pancake will be ready to flip when it begins to bubble. Cook both sides until they are golden brown. The pancake is then ready to serve with your favourite toppings!
